Ingredients

  • 18 Smoked or Green-lipped Mussels (chopped)
  • 2 Courgettes (grated)
  • 2 Eggs
  • 3/4 C Flour
  • 3/4 tsp Baking Powder
  • 1 Tbsp Spring Onion (finely chopped)
  • 1 Tbsp Coriander (finely chopped)
  • 2 Cloves Garlic (minced)
  • Pinch Salt
  • Pinch Ground Black Pepper
  • 1/2 Lemon (juice)
  • Butter

Directions

Mix together eggs, lemon juice, baking powder and flour. Once a thick batter has been formed add mussels, courgettes, spring onion, coriander, garlic, salt and pepper

Place butter into pan and melt, spoon mixture into pan making a small pancake. Cook on medium heat for 3 minutes each side

Serve with Aioli or garlic infused mayonnaise
