Ingredients
- 18 Smoked or Green-lipped Mussels (chopped)
- 2 Courgettes (grated)
- 2 Eggs
- 3/4 C Flour
- 3/4 tsp Baking Powder
- 1 Tbsp Spring Onion (finely chopped)
- 1 Tbsp Coriander (finely chopped)
- 2 Cloves Garlic (minced)
- Pinch Salt
- Pinch Ground Black Pepper
- 1/2 Lemon (juice)
- Butter
Directions
Mix together eggs, lemon juice, baking powder and flour. Once a thick batter has been formed add mussels, courgettes, spring onion, coriander, garlic, salt and pepper
Place butter into pan and melt, spoon mixture into pan making a small pancake. Cook on medium heat for 3 minutes each side
Serve with Aioli or garlic infused mayonnaise
